A Bespoke Dinner at Fare Food Co.
In the world of high-stakes event coordination, a site visit is about much more than measuring floor space, it’s about finding the right energy.
When my walkthrough at Fare Food Co. began with the Chefs and Co-Founds Spencer Newlands and Tosh Agassiz and I sharing photos of our dogs, I knew immediately that we were going to hit it off. As a devoted dog grandmom to my Ollie, I’ve learned that people who lead with that kind of compassion and spirit are the ones you want in your corner. When you find a team that shares that same heart, you know the collaboration is going to be effortless and the execution will be handled with genuine care.
The Space: A Warm Canvas for Innovation
Fare Food Co. is a unique private event space. The layout is intentionally versatile: a staircase leads you up to a lounge area with a full bar, which sits adjacent to a separate dining room and an open kitchen.
The beauty of this space is its flexibility. It doesn’t dictate a rigid look; instead, it serves as a warm, inviting canvas that lends itself to whatever vision you choose to create.
The Challenge: Reimagining the Flow
For this intimate dinner of ten, I wanted to move away from the traditional dining room setup. To ensure absolute privacy and a focused atmosphere, away from the necessary noise of a working kitchen, I proposed hosting both the cocktail hour and the full dinner service entirely within the lounge area.
The primary hurdle? The dining room table was a permanent fixture, too large to be moved. In event execution, "it can’t be done" is rarely the final answer. Spencer and Tosh went way out of their way to accommodate my request, personally sourcing a table that fit the lounge dimensions perfectly.
Precision in the Details
My role is to anticipate risks before they become realities. Because the entrance involves a flight of stairs, I requested runners to be installed to ensure guests in high heels had zero concerns about slipping or falling. The team at Fare Food Co. handled this immediately, proving they value operational safety as much as I do.
To bring the aesthetic to life, I brought in my preferred florist, Elizabeth Munro. She designed a decor scheme that was simple, elegant, and sophisticated, transforming the room into a warm, inviting environment that my guests raved about all evening.

A great event is a sensory experience. We collaborated on a menu that was as flavorful as it was refined. To elevate the service, I requested French Service, and the team fulfilled that wish with seamless precision.
